Once you make your own chilli oil, it’s hard to go back to a jar off the shelf. Crispy fried garlic, toasted sesame oil, peanuts and a proper amount of chilli flakes, all sitting together in one jar ready to go on almost anything.

The trickiest part is knowing when to pull the garlic off the heat. It goes from golden to burnt fast in the last few minutes, and burnt garlic will make the whole batch taste bitter, so keep a close eye on it.

One batch makes a decent-sized jar that’ll last a few weeks in the fridge, so it’s worth making regularly to have on hand for noodles, eggs, dumplings or whatever needs a bit of heat and crunch.

This isn't just heat — the crispy garlic, toasted sesame oil and peanuts give it real texture and depth, so it works more like a topping than a plain hot sauce.

One batch lasts for weeks in the fridge, so it's worth the half hour of effort. A spoonful goes on noodles, fried rice, eggs, dumplings, or basically anything that could use a bit more flavour.

Homemade also means you control the heat level, so you can go as mild or as fiery as you actually want rather than what's on the shelf.

Ingredients

  • 8 Garlic Cloves Sliced
  • 3 Spring Onions (Scallions) Sliced
  • 40 g Roasted Unsalted Peanuts Chopped
  • 150 ml Neutral Oil
  • 20 g Dried Chilli Flakes
  • 1 Dried Long Red Chilli Optional
  • 150 ml Toasted Sesame Oil
  • 10 g Sea Salt Flakes
  • 40 g Brown Sugar Optional

Method

  • Place a large pan over medium heat. Add the sunflower oil, chilli flakes, garlic, spring onion and long red chilli (if using). Mix and heat the oil until it starts to bubble (about 6 minutes).
  • Once bubbling, reduce the heat to medium-low, give it a good stir, and allow to slowly fry for 14 to 15 minutes, stirring every 5 minutes.
  • After 15 minutes, once the garlic is golden and crispy, remove it from the heat and place the pan onto a heat-resistant surface.
  • While still hot, add the toasted sesame oil, roasted and chopped peanuts, sea salt flakes and brown sugar. Mix to dissolve the salt and sugar, then allow to cool down.
  • Once cool, pour into a sterilised glass jar or airtight container. Dig in.
Chef's Tips
Keep a close eye on the garlic during the last few minutes of frying — it goes from golden to burnt quickly, and burnt garlic will turn the whole batch bitter.
Add the sesame oil, peanuts, salt and sugar while the oil is still hot, not after it's cooled — the residual heat is what dissolves the salt and sugar evenly through the oil.
Let it cool completely before jarring and sealing — trapping heat in a sealed jar can create condensation, which shortens the shelf life.
Storage & Reheating
Refrigerate only — do not store at room temperature. Because this contains fresh garlic in oil (a known botulism risk if left unrefrigerated), keep it in a sterilised, airtight glass jar in the fridge and use within 2-3 weeks. No reheating needed; just give it a stir before using, as the solids will settle over time.

Common Questions
Why does this need to be refrigerated?⌄
Fresh garlic stored in oil at room temperature carries a botulism risk, since it creates a low-oxygen environment bacteria can grow in. Keeping it refrigerated and using it within 2-3 weeks keeps it safe.
Can I make it less spicy?⌄
Yes, just reduce the chilli flakes and leave out the whole dried chilli, which is already optional. You'll still get plenty of flavour from the garlic and sesame oil.
Can I leave out the peanuts?⌄
Yes, they're there for crunch and a bit of richness but aren't essential. Toasted sesame seeds are a good substitute if you want to keep some texture in there.
What can I use this on?⌄
Noodles, fried rice, dumplings, eggs, or stirred through a stir fry at the end all work well. It's a good one to just have on hand for whenever a dish needs a bit more heat.
