This chimichurri chicken meal prep is easy to make, cheap, and delicious. I have tried to increase the amount of protein and calories for those wanting to eat this to bulk up. This chimichurri chicken recipe is also a base recipe which means it is pretty plain but allows you to add any of your favourite veggies, legumes, or anything you want to add. The flavour combination will work with nearly anything you decide to add if you wish to do so.

Ingredients
 

Chicken & Seasoning

  • 1kg (2.2lbs) - Chicken Breast
  • 2 tsp (5g) - Onion Powder
  • 2 tsp (5g) - Garlic Powder
  • 2 tsp (5g) - Smoked Paprika
  • 2 tsp (10ml) - Olive Oil
  • Seasoning To Taste

Chimichurri

  • 10g (0.3oz) - Flat Leaf Parsely
  • 10g (0.3oz) - Coriander (Cilantro) (Optional)
  • 3 - Garlic Cloves
  • 1 tsp (2g) - Dried Oregano
  • ¼ tsp (0.2g) - Chilli Flakes (Optional)
  • ⅓ Cup (80ml) - Extra Virgin Olive Oil (EVOO)
  • ¼ Cup (60ml) - Red Wine Vinegar (Substitute For Lemon Juice)
  • Seasoning To Taste

Basmati Rice

  • 320g (11.2oz) - Basmati Rice, Washed
  • 640ml (640g) - Cold Water
  • Salt To Taste

Instructions

  • Preheat oven to 200°c - 390°f.
  • Place a saucepan over high heat, and add in the rice, cold water, and salt to taste. Stir and bring to a boil. Reduce the heat to low, cover with a lid and cook for 14 minutes undisturbed. After 14 minutes, turn off the heat and leave the lid on for a final 4 minutes. remove the lid, fluff up the rice with a spatula and set aside.
  • Place a large pan over high heat, add in the olive oil and sear the seasoned chicken for 3 minutes on each side or until deeply golden. Transfer to the preheated oven and cook for 14 minutes. Remove, allow to rest for 10 minutes, and thinly slice.
  • To make the chimichurri, add all of the ingredients into a blender or mortar and pestle and blend or bash until it forms a thick but pourable mixture. Add to the sliced chicken.
  • Serve the chimichurri chicken over the soft and fluffy rice. Garnish with lime and coriander (cilantro) (optional). Dig in.

Chimichurri Chicken Meal Prep Storage Instructions

To store, place in the fridge for up to 4 days and in the freezer for up to 4 months, both held in airtight containers. Allow to thaw in the refrigerator overnight before reheating.

Reheating can be done one of two ways. The easiest method is to reheat in a microwave, in bursts, until hot throughout. Alternatively, it can be reheated in a pan to create a fried rice dish.

    Just made this tonight! Subbed the chicken breast for chicken thigh as supermarket was out of CB. Could have cooked the chicken for maybe 2 minutes less in oven but still good. So delicious and easy. Used the mortar and pestle for the chimichurri and came out beautifully. Very fresh and zingy. Will be prepping this on the regular. Thank you so much.
