These loaded potato bites are low in calories and incredibly delicious, easy, and cheap. This is the perfect meal to take out of the house with you or have stored ready for you when you get home from a long day’s work.

Ingredients
 

Roasted Potatoes

  • 1.2kg (2.6lbs) - All Rounder Potatoes, Washed & Chopped
  • 2 tsp (10ml) - Olive Oil
  • 1 tsp (2.5g) - Onion Powder
  • 1 tsp (2.5g) - Garlic Powder
  • 1 tsp (2.5g) - Ground Cumin
  • 1 tsp (2.5g) - Sweet Paprika
  • 1 tsp (1g) - Dried Oregano
  • ½ tsp (0.5g) - Red Chilli Powder (Optional)
  • Seasoning To Taste

Bolognese Chilli Con Carne Hybrid

  • 2 tsp (10ml) - Olive Oil
  • 500g (1.1lbs) - Beef Mince (Ground Beef)
  • 4 - Garlic Cloves, Minced
  • 3 - Spring Onions (Scallions), Thinly Sliced & Separated
  • 1 ½ tsp (3.5g) - Ground Cumin
  • 2 tsp (2g) - Dried Italian Herbs
  • 2 Cans (800g - 1.76lbs) - Diced or Crushed Tomatoes
  • 120g (4.23oz) - Mozzarella Cheese, Freshly Grated
  • Seasoning To Taste

Garnish

  • Sour Cream
  • Spring Onion (Scallion), Stems
  • Sriracha Mayonnaise

Instructions

  • Preheat oven to 190°c - 375°f. Line a baking tray with parchment paper.
  • Place the potatoes into a mixing bowl and add the olive oil and all the seasonings. Mix to combine.
  • Place the seasoned potatoes onto the line baking tray and bake for 25 to 30 minutes or until soft and golden, mixing halfway through. Remove and let cool.
  • Place a large high-rimmed pan over high heat, and add in olive oil and the beef mince. Sear for 8 minutes. Add in the garlic, spring onions (scallion), ground cumin, Italian herbs, and seasoning to taste. Mix to combine and cook for 3 minutes.
  • Add in the tomatoes, mix well, reduce heat to medium and simmer for 12 minutes, stirring occasionally. Add over the grated mozzarella cheese, allow it to melt, and remove from the stovetop.
  • Evenly divide and lay the potatoes into 5 meal prep containers. Place the beef mince over the top and garnish with sour cream, spring onion (scallion), and sriracha mayonnaise. Dig in.

Potato Bites Meal Prep Storage Instructions

Store the potato bites in the fridge for up to 5 days and in the freezer for up to 4 months, both held in airtight containers

Potato Bites Meal Prep Reheating Instructions

The potato bites can be reheated in a pan over medium heat until hot throughout. Alternatively, the easiest method is to put it in the microwave, in bursts, until hot throughout. 

Additional Notes

The potatoes aren’t supposed to be crispy. If we were to cook them that far, they would be hard and chewy upon reheating. Cooking them to a soft point allows them to soak up the sauce from the beef and create a better experience upon reheating.
