No oven required past roasting the nuts, and no complicated technique either. Marshmallows, crushed biscuits and roasted nuts folded through a mix of milk and dark chocolate, pressed into a tin and left to set.

Roasting the nuts first makes a real difference to the flavour, but keep them to just lightly golden — any further and they’ll turn bitter once mixed through the sweet chocolate base.

It keeps for weeks in the fridge or months in the freezer, so it’s a great one to make ahead for a party, a gift, or just to have on hand for whenever a chocolate craving hits.

Past roasting the nuts for a few minutes, there's no actual baking involved. It's melt, mix, press into a tin, and let the fridge do the rest.

The mix of pistachios, macadamias and peanuts gives it way more going on texture-wise than a standard rocky road, without making it complicated to put together.

It's a great one to make ahead of a party or the holidays, since it only gets better the longer it sits and sets in the fridge.

Ingredients

  • 80 g Pistachio Nuts Chopped
  • 50 g Macadamia Nuts Chopped
  • 50 g Peanuts Chopped
  • 200 g Digestive Biscuits Crushed
  • 100 g Mini Marshmallows
  • 100 g Milk Chocolate Chips
  • 150 g Dark Chocolate Chips
  • 120 g Unsalted Butter Cubed
  • 45 g Golden Syrup

Method

  • Preheat oven to 180°C (350°F).
  • Roughly chop the pistachio nuts, macadamia nuts and peanuts. Add the nuts to a baking tray lined with parchment paper, spreading them out for an even roast. Roast in the oven for 6 minutes or until lightly golden brown. Allow to cool down. If you'd like a nut topping later, set a small handful aside once cooled.
  • In the meantime, place the digestive biscuits into a mixing bowl and crush them with your hands into different-sized pieces.
  • Add the marshmallows as well as the cooled roasted nuts (minus any reserved for topping) and mix it all together.
  • For the chocolate, place a large saucepan onto your stovetop and add both chocolates, butter and golden syrup. Place over medium-low heat and gently stir the ingredients regularly, just until everything has melted together. Remove from the stovetop.
  • Add the dry mixture to the chocolate, half at a time, mixing through until everything is coated well. Add the remaining dry mixture.
  • Pour the mixture into a 20cm x 20cm baking dish lined with parchment paper. Firmly push down the mixture to avoid any air bubbles and to spread it evenly. At this point, for an optional addition, sprinkle over the reserved chopped nuts for a nice layer on top. Place in the fridge for anywhere between 2 to 24 hours to set.
  • To serve, remove the rocky road from the fridge and allow it to sit for 10 minutes. Remove it from the tray, discard the parchment paper, and cut it into 16 even-sized pieces. To do this, slice in half, then each half in half again to get 4 even-sized rectangles. Rotate 90 degrees and repeat the process, then serve. Dig in.
Chef's Tips
Roast the nuts just until lightly golden — going further will make them bitter once mixed into the sweet chocolate base.
Push the mixture down firmly and evenly into the tin — this is what stops air pockets and gives you clean, solid slices rather than crumbly ones.
Let it set the full time in the fridge before slicing — cutting into it too early will make it messy and hard to get neat pieces.
Storage & Reheating
Store in an airtight container in the fridge for up to 2 weeks, or in the freezer for up to 2 months. No reheating needed — let frozen pieces thaw in the fridge, or serve straight from the fridge for the best texture.

Common Questions
Can I use different nuts?
Yes, almonds, cashews or hazelnuts all work well as substitutes. Keep the total weight roughly the same so the ratio of nuts to chocolate stays balanced.
Why is my rocky road crumbly instead of holding together?
This usually comes down to not pressing the mixture down firmly enough in the tin. Push it in evenly and firmly to remove air pockets before it goes in the fridge to set.
Can I use all dark chocolate instead of a mix?
Yes, though it'll be noticeably richer and less sweet. The mix of milk and dark gives a good balance, so adjust to taste if you go all dark.
How long does it keep?
Up to 2 weeks in the fridge or 2 months in the freezer, both in an airtight container. Thaw frozen pieces in the fridge before serving.
