Ingredients
 

Chicken & Marinade

  • 4 - Chicken Thighs, Boneless & Skinless
  • 1 Cup (250ml) - Buttermilk
  • 2 tsp (8g) - Onion Powder
  • 2 tsp (8g) - Garlic Powder
  • 2 tsp (8g) - Smoked Paprika
  • ¼ tsp (0.5g) - Cayenne Pepper
  • Salt & Pepper

Dredge

  • 1 Cup (120g) - Plain (All Purpose) Flour
  • ½ Cup (60g) - Cornflour or Starch
  • 1 tsp (4g) - Onion Powder
  • 1 tsp (4g) - Garlic Powder
  • 2 tsp (8g) - Smoked Paprika
  • Salt & Pepper

Frying

  • Neutral Oil or Tallow

Honey Butter Glaze

  • 3 Tbsp (42g) - Unsalted Butter
  • 2 Tbsp (28g) - Honey
  • ½ tsp (1g) - Dried Chilli Flakes (Optional)
  • Salt to Taste

Bread & Fillings

  • 2-4 - Buns of Choice
  • Pickles or Coleslaw
  • Mayonnaise

Coleslaw

  • ¼ - Green (White) Cabbage, Thinly Sliced
  • ½ - Red Onion, Thinly Sliced
  • 1 - Carrot, Grated
  • 2 Tbsp (40g) - Mayonnaise
  • 1 tsp (5ml) - Apple Cider Vinegar
  • 1 tsp (10g) - Dijon Mustard
  • Salt & Pepper

Alternate Cooking Instructions

Air Fryer Method

Preheat air fryer to 180°C (350°F).

Lightly spray both sides of the raw, breaded chicken with oil.

Place in the air fryer basket, do not overcrowd.

Cook for 12–15 minutes, flipping halfway through.

Check for doneness: internal temp should reach 75°C (165°F).

Rest for 2 minutes before serving.

 

Oven Method

Preheat oven to 200°C (390°F).

Place chicken on a wire rack over a baking tray.

Lightly spray the chicken with oil for a golden finish.

Bake for 20–25 minutes, flipping halfway through.

Ensure internal temp hits 75°C (165°F).

Let rest briefly before building the sandwich.

Recipe Notes

Storage Instructions

Store leftover chicken only (not assembled sandwiches) in an airtight container in the fridge for up to 4 days.

To freeze, let the cooked chicken cool completely, then wrap tightly and store in a freezer-safe container or bag for up to 2 months.

Keep buns, slaw, and sauces separate and fresh when ready to assemble.

Reheating Instructions

Air Fryer

Reheat chicken at 180°C / 360°F for 5–7 minutes or until hot and crispy.

If frozen, add an extra 3–5 minutes.

Oven

Preheat oven to 180°C / 350°F.

Place chicken on a wire rack or baking tray and bake for 10–12 minutes.

If frozen, bake for 15–18 minutes. Cover loosely with foil to avoid drying out.

Microwave (least preferred)

Heat chicken on medium power for 1–2 minutes.

To restore crispiness, finish with a minute or two in the air fryer or under a grill.
