Creamy garlic sauces are already delicious, but creating this one pot creamy garlic cajun chicken pasta is something else. It’s easy to make, doesn’t cost a lot of money, and you should already have most of the herbs and spices in your kitchen. You won’t regret making this, I promise.
Place the diced chicken thigh into a bowl. Add in the cajun spice and mix to combine.
Place a large high-rimmed pan or pot over medium-high heat. Add in olive oil and chicken and sear for 5 minutes, mixing regularly. Add the onion and garlic and saute for 3 minutes, mixing regularly. Season to taste.
Add the chicken stock, canned tomatoes and cream. Mix well, check seasoning levels and bring to a boil. Add the uncooked penne or pasta of choice, stir to combine, and whilst heavily simmering, cook for 12 minutes or until the pasta is al dente.
Grate in the parmesan cheese (optional) and flat-leaf parsley. Mix to combine and remove from the stovetop.
Serve in bowls and garnish with more parmesan cheese, flat-leaf parsley and cracked black pepper. Dig in.

Creamy Cajun Chicken Pasta Storage Instructions
To store, place the pasta in the fridge for up to 3 days and in the freezer for up to 4 months, stored in airtight containers if freezing. Thaw in the fridge overnight before reheating otherwise you’ll run the risk of it drying out too much if you try to reheat from frozen.Â
Creamy Cajun Chicken Pasta Reheating Instructions
To reheat, place in the microwave in bursts until hot throughout, mixing between each burst. Alternatively, it can be reheated in a pan over medium heat. If you do it this way, you will need to add a splash of fresh cream to refresh it.Â
