Quick, Easy & Delicious Lemon Chilli Chicken & Cheese Sandwich
Theres always times when dinner can feel like a daunting task. Whenever I feel like that, I have a selection of recipes I go to, and this chilli lemon chicken sandwich is one of them. It’s easy to make, cheap and can easily be modified to use up leftover ingredients in your kitchen. Please enjoy.
Chicken & Cheese Sandwich
Ingredients
Chicken & Marinade
- 2 tsp (10ml) - Olive Oil
- 8 - Chicken Thighs, Boneless & Skinless
- 1 - Lemon, Juice & Zest
- 1-2 - Long Red Chillies, Finley Chopped (Seeds Optional)
- 3 - Garlic Cloves, Minced
- 1 tsp (2.5g) - Sweet Paprika
- ½ tsp (0.5g) - Dried Oregano
- ½ tsp (0.5g) - Dried Thyme
- ½ tsp (0.5g) - Dried Basil
- Seasoning To Taste
- 4 - Burger Buns
- 4 - Cheddar Cheese Slices
- Mayonnaise or Sauce of Choice
Coleslaw
- 100g (3.5oz) - White Cabbage, Thinly Sliced
- 100g (3.5oz) - Red Cabbage, Thinly Chopped
- 5g (0.2oz) - Flat Leaf Parsley, Finely Chopped
- ½ - Red Onion, Thinly Sliced
- 2 - Spring Onions (Scallions), Thinly Sliced
- ½ Cup (100g) - Plain Greek Yoghurt
- ½ - Lemon, Juice Only
- 2 ½ Tbsp (50ml) - Macadamia Oil, Can Be Substituted For Extra Virgin Olive Oil
- 1 ½ tsp (10g) - Honey
- Seasoning To Taste
Instructions
- Preheat oven to 200.c - 390.f. Line a baking tray with parchment paper.
- Add the chicken thigh, lemon juice and zest, chillies, garlic, sweet paprika, dried oregano, dried thyme, dried basil, olive oil, a big pinch of salt and cracked black pepper in a large mixing bowl. Mix well and allow to marinate for 30 minutes up to 48 hours.
- Place the marinated chicken onto the prepared baking tray, spread it evenly and bake in the preheated oven for 25 minutes or until golden and slightly charred. Remove, stack two pieces of chicken on top of one another and place over a slice of cheese. Allow the cheese to melt and the chicken to rest for 4-5 minutes.
- While the chicken is marinating or cooking, combine all the coleslaw ingredients in a mixing bowl. Add in the dressing ingredients and mix well again. Check seasoning and place in the fridge until ready to serve.
- Toast the burger buns to your liking either in the oven or in a pan. Add the coleslaw to the bottom bun, add over the stacked chicken with cheese and add a sauce of choice to the top bun before closing. Serve and dig in.

Recipe Notes
Storage Instructions
Once assembled, storing the sandwich is not recommended unless you wish to eat it cold. It will last two days in the fridge until the coleslaw becomes soggy. Without the coleslaw, it will last three days. The coleslaw alone will last 3-4 days in the refrigerator. Be sure to give it a good mix before eating.
Reheating Instructions
If you wish to reheat the sandwich, I recommend removing the chicken and placing it in a preheated oven set to 180.c – 350.f and heating for 6-7 minutes or until hot in the centre. Then, reassemble the sandwich.
