Chipotle Beef & Potato Bowls – Easy Meal Prep for the Week
These Chipotle Beef & Potato Bowls are a quick, healthy, and high-protein meal prep option perfect for busy weeks. Packed with smoky flavour, roasted potatoes, and seasoned ground beef, this easy recipe is budget-friendly, satisfying, and ideal for lunch or dinner. Ready in under 45 minutes.
Chop all of the salsa ingredients and place them in a bowl. Season to taste and transfer to a separate meal prep container.
Place the potatoes into a bowl, add all the seasonings and transfer to an air fryer or a lined baking tray. Spray with avocado oil and cook for 22 minutes at 190°c (375°f). If using an oven, increase the time to 30 minutes or until cooked through.
Add avocado spray oil in a large, high-rimmed pan over high heat and add the beef. Season with salt and pepper and cook for 8 minutes or until browned and any liquid has evaporated. Add the seasonings and chipotle in adobo and cook, mixing well for 2 minutes. Remove from the heat.
Serve the chipotle beef and potatoes in 5 x 750ml meal prep containers. Garnish with spring onion and drizzle over the sriracha sauce or sauce of choice. When reheated, serve with fresh salsa.
