DIFFICULTY
Easy
Spiced beef and soft, cheesy scrambled eggs wrapped up and toasted until golden. A proper make-ahead breakfast that reheats from the fridge or freezer straight into something crisp and hot.
Browning the beef fully before the tomatoes and spices go in builds a real flavour base, rather than letting them simmer away in a half-cooked, watery pan. The eggs get their own bit of technique too — pulled off the heat while still slightly soft, since they firm up further once wrapped and reheated, so cooking them fully now would only leave them rubbery later.
Wrap them in whatever you’ve got on hand — foil, food-safe paper, zip-lock bags — and they keep in the fridge for days or the freezer for months, ready to toast whenever breakfast needs sorting.

A proper breakfast, ready when you are
Whisking the eggs thoroughly before they hit the pan is what gives you light, evenly cooked curds instead of streaky, uneven eggs — a step that's easy to rush but makes a real difference.
Pulling the eggs while they're still slightly soft is the trick that keeps them from turning rubbery on the second reheat — they finish setting in the toaster oven or air fryer, right when you're ready to eat.
With 53g of protein a burrito, these hold up as a genuinely filling breakfast, not just a quick bite on the way out the door.

Method
- Place a pan over medium-high heat and add a touch of spray oil. Add the beef mince and cook for 5–6 minutes, or until no longer pink. Add the spices and diced tomatoes and mix well. Cook for a further 2 minutes and remove from the heat. Transfer to a bowl, or reuse the pan for extra flavour.
- Crack the eggs into a bowl and whisk until smooth. Place the same pan, or a clean one, over medium-high heat. Add the butter and allow it to melt. Pour in the whisked eggs and cook for 2–3 minutes, or until soft curds have formed. Add the grated cheese, salt, and pepper, and mix through until melted. Remove from the heat.
- Warm the tortillas slightly. Arrange the beef mix and scrambled egg on top, add your sauce of choice, and wrap tightly.
- Wrap in aluminium foil, food-safe paper, zip-lock bags, or meal prep containers.
- To toast before or after storing, place on a baking tray lined with parchment paper and spray lightly with oil. Bake at 200°C (390°F) for 15–16 minutes, or air fry at 200°C (390°F) for 6–7 minutes, until golden and hot through.
Why pull the eggs off the heat while they're still soft?⌄
The eggs keep cooking as the burrito toasts later, so pulling them slightly underdone the first time stops them from turning rubbery on the reheat. They'll be perfectly set by the time you eat them.
Can I add other fillings to these burritos?⌄
Definitely — sautéed peppers, onions, or a bit of avocado all work well. Just keep in mind that anything with high water content, like fresh tomato, can make the wrap soggier over time.
What's the best way to reheat these from frozen without a soggy wrap?⌄
Thaw overnight in the fridge first, then bake or air fry as directed rather than microwaving — the dry heat is what keeps the tortilla crisp instead of steaming it soft.
Can I use a different ground meat instead of beef?⌄
Yes, pork or chicken mince both work well here. If using chicken or turkey, make sure it's cooked through to 74°C (165°F) rather than the 71°C (160°F) target for beef.
