Place a pan over medium-high heat and add a touch of spray oil. Add the beef mince and cook for 5–6 minutes, or until no longer pink. Add the spices and diced tomatoes and mix well. Cook for a further 2 minutes and remove from the heat. Transfer to a bowl, or reuse the pan for extra flavour.
Crack the eggs into a bowl and whisk until smooth. Place the same pan, or a clean one, over medium-high heat. Add the butter and allow it to melt. Pour in the whisked eggs and cook for 2–3 minutes, or until soft curds have formed. Add the grated cheese, salt, and pepper, and mix through until melted. Remove from the heat.
Warm the tortillas slightly. Arrange the beef mix and scrambled egg on top, add your sauce of choice, and wrap tightly.
Wrap in aluminium foil, food-safe paper, zip-lock bags, or meal prep containers.
To toast before or after storing, place on a baking tray lined with parchment paper and spray lightly with oil. Bake at 200°C (390°F) for 15–16 minutes, or air fry at 200°C (390°F) for 6–7 minutes, until golden and hot through.
