Ingredients
 

Chicken

  • 1 Tbsp (20ml) - Peanut Oil
  • 1kg (2.2lbs) - Chicken Thigh or Breast, Sliced Into Strips
  • 1 ½ Tbsp (20g) - Corn Flour or Starch

Teriyaki Sauce

  • 60ml (¼ Cup) - Soy Sauce
  • 40ml (2 Tbsp) - Dark Soy Sauce
  • 70ml (¼ Cup + 2 tsp) - Cooking Sake
  • 70ml (¼ Cup + 2 tsp) - Mirin
  • 15g (3 tsp) - Sugar

Brown Rice & Bok Choy

  • Water To Fill Saucepan
  • 350g (12.35oz) - Brown Rice
  • 1 Tbsp (20ml) - Peanut Oil
  • 4 - Large Bok Choy, Washed & Sliced
  • 1 tsp (5ml) - Sesame Oil
  • Seasoning To Taste

Instructions

  • Place a pot of water over high heat and bring it to a boil. Add in the brown rice, stir to prevent any clumps and cook for 28 minutes. Remove and drain. Place the cooked rice back into the pot, place on a lid and let it steam for 8 minutes off the heat. Remove the lid, fluff with a fork or spatula and set aside.
    Cook Brown Rice
  • In a small saucepan, add all the teriyaki ingredients. Place over high heat and bring it to a boil. Reduce heat to low and simmer for 5 minutes. Remove and set aside.
    Make Teriyaki Sauce
  • In a mixing bowl, add the chicken thigh and cornflour and mix to coat.
    Coat Chicken
  • Place a pan over medium-high heat, add peanut oil and sear the chicken for 5 minutes on each side or until golden and slightly crisp. Pour over the teriyaki sauce, mix to combine and bring to a boil. Reduce heat to low and simmer for 6 minutes or until thick. Remove and set aside.

  • Place a clean pan over medium-high, add peanut oil and bok choy and saute for 5 minutes or until golden and al dente. Add the sesame oil and seasoning to taste, mix to combine and remove from heat.

  • To serve, place the brown rice on one side of the meal prep containers, the bok choy in the centre and the teriyaki chicken on the other. Garnish with sesame seeds (optional). Dig in.

Recipe Notes

Teriyaki Chicken Meal Prep Storage Instructions

To store, place the airtight containers in the fridge for up to 4 days and in the freezer for up to 4 months. 

Eating these within three days is always recommended, but it will stretch to five days, losing flavour and quality. 

Teriyaki Chicken Meal Prep Reheating Instructions

To reheat, the best way is to place it in the microwave and reheat it in bursts until hot throughout. It can also be separated into a pan to reheat over the stovetop on medium heat. 

Reheating Rice

There’s a lot of controversy about reheating rice. This is mainly for restaurants and cafes etc., which fall under agreements, insurance and other liabilities they may have. Doing so at home is fine; the rice will last 3-4 days in the fridge.

Now, like most things, you don’t have to follow these instructions if you don’t want to. If you are concerned about this situation, you can cook fresh rice every time. To ensure the rice is safe to eat, heat it until completely hot. 

What Is Sake?

Sake is a Japanese wine made from fermented rice. It is also commonly used in Japanese cooking, usually in sauces or marinades. Sake can be substituted for 1 part rice wine vinegar to 3 parts water, so for this recipe, you will need 50ml rice wine vinegar and 150ml of water.

What Is Mirin?

Mirin is a Japanese rice wine similar to Sake. Mirin has a lower alcohol level than Sake but contains more sugar. For those that can’t consume alcohol, it can be substituted for 1 part sugar to 3 parts water, so for this recipe, you will need 50g of sugar and 150ml of water.

Alcohol Substitutes

This substitution makes – 250ml (1 cup)

  • 60ml (1/4 cup) – Soy Sauce
  • 40ml (2 Tbsp) – Dark Soy Sauce
  • 50g (2 1/2 Tbsp) – White Sugar
  • 125ml (1/2 cup) – Vegetable or Chicken Stock

Both soy sauces are interchangeable, which means you can use one for the other or omit one completely. If you don’t use dark soy sauce, the teriyaki sauce will be much lighter in colour.

Brown Rice Notes

Brown rice is a healthier alternative to white rice, but basmati rice can be used. The choice is all yours. The way I cooked the rice in this video will no doubt cause controversy among the people that always have to be correct. The way it’s cooked in this video is one of, if not the best, ways to achieve perfect brown rice.
