Ingredients
 

Prawns & Marinade

  • 650g (1.4lbs) - Prawns (Shrimp), Peeled & Deveined
  • 1 - Red Onion, Finely Diced
  • 4 - Garlic Cloves, Crushed & Roughly Chopped
  • 1 ½ tsp (3.5g) - Whole Cumin Seeds
  • 8g (0.2oz) - Chilli Paste (Optional)
  • 110ml (110g) - Extra Virgin Olive Oil
  • Seasoning To Taste
  • 1 ½ - Limes, Juice Only

Salad Mix

  • ¼ - Small White Cabbage, Thinly Shredded (Chiffonade)
  • 1 - Small Continental Cucumber, Quartered & Thinly Sliced
  • 15g (0.5oz) - Coriander (Cilantro), Roughly Chopped
  • Sea Salt Flakes To Taste

Tomato & Chipotle Salsa

  • 4 - Tomatoes, Cored & Diced
  • 20g (0.7oz) - Chipotle In Adobo (Easy To Find In Shops)
  • Seasoning To Taste
  • 8 - Small Tortillas, Warmed

Instructions

Prawns & Marinade

  • Peel & devein the prawns. Add them into a bowl along with the marinade ingredients. Mix well, wrap tightly and marinate in the fridge for 1 hour or overnight.

Salad Mix

  • Mix the salad ingredients in a large bowl & place in the fridge until ready to serve.

Tomato & Chipotle Salsa

  • Add the tomatoes, chipotle in adobo & sea salt flakes into a mixing bowl, mix well & place in the fridge until ready to serve.

Cooking & Serving

  • Place a pan over medium-high heat, add in the prawns & marinade & fry for 1 minute on each side. Remove, place into a clean bowl & squeeze in the lime juice, mix well.

  • Either serve everything separately at the table or assemble the tortillas beforehand. To assemble, warm the tortillas in a microwave for 20 seconds, add in the tomato & chipotle salsa then the marinated prawns & top with the salad mix. Wrap, roll, slice, serve & dig in.

Recipe Notes

Prawns Tortillas Storage Instructions

To store, leave all the ingredients separately, which will last 3 days in the fridge. The prawn/shrimp mix can also be frozen for up to 3 months. If mixed, it will last up to 1 day in the refrigerator before deteriorating. 

Prawn Tortillas Reheating Instructions

To reheat the prawn/shrimp mix, place it in a pan over medium heat and mix for 2 minutes until hot in the centre. Alternatively, it can be put into the microwave and heated in bursts, mixing between each one.

What If I Don't Eat or Like Seafood?

This recipe can be made with thinly sliced chicken breast instead of prawns/shrimp. To do so, make the same marinade with the same weight of the chicken breast to prawns/shrimp and pan fry for 4 1/2 minutes, mixing it regularly.
