Spicy Prawn Tortillas

Ingredients

Prawns & Marinade

  • 650 g Prawns Peeled & Deveined
  • 1 Red Onion Diced
  • 4 Garlic Cloves Minced
  • 3 g Cumin Seeds
  • 8 g Chilli Paste Optional
  • 110 ml Extra Virgin Olive Oil
  • 1 ½ Limes Juiced
  • Salt & Pepper To Taste

Salad Mix

  • ¼ White Cabbage Shredded
  • 1 Cucumber Sliced
  • 15 g Coriander (Cilantro) Chopped
  • 4 Tomatoes Diced
  • 20 g Chipotle in Adobo
  • Salt & Pepper To Taste

To Serve

  • 8 Small Tortillas or Wraps Warmed

Method

Prawns & Marinade

  • Peel and devein the prawns. Add to a bowl along with the marinade ingredients (except the lime juice, which is added after cooking). Mix well, wrap tightly, and marinate in the fridge for 1 hour, or overnight.

Salad Mix

  • Mix the salad ingredients in a large bowl and place in the fridge until ready to serve.

Tomato & Chipotle Salsa

  • Add the tomatoes, chipotle in adobo, and sea salt flakes into a mixing bowl. Mix well and place in the fridge until ready to serve.

Cooking & Serving

  • Place a pan over medium-high heat, add the prawns and marinade, and fry for 1 minute on each side, or until pink and opaque throughout. Remove, place into a clean bowl, and squeeze in the lime juice. Mix well.
  • Either serve everything separately at the table, or assemble the tortillas beforehand. To assemble, warm the tortillas in the microwave for 20 seconds, add the tomato and chipotle salsa, then the marinated prawns, and top with the salad mix. Wrap, roll, slice, serve, and dig in.
Chef's Tips
Don't marinate the prawns longer than overnight — the lime and acidic marinade will start to "cook" them ceviche-style if left too long, changing their texture before they even hit the pan.
Cook the prawns quickly over high heat — they only need a minute or so per side, and overcooking will make them tough and rubbery.
Assemble the tortillas just before eating rather than ahead of time — the salad and salsa will make them soggy if they sit together too long.
Storage & Reheating
The cooked prawns, salad, and salsa will each keep separately in the fridge for up to 2 days in airtight containers. This dish is best assembled fresh, so store the components separately rather than as built tortillas. Reheat the prawns gently in a pan for a minute or so if serving warm, or enjoy cold — the salad and salsa are best served straight from the fridge.
