Ingredients
 

Beef Filling

  • 1 Tbsp (20ml) - Olive Oil
  • 1 - Brown Onion, Grated
  • 1 - Carrot, Grated
  • 1 - Celery Stick, Grated
  • 4 - Garlic Cloves, Minced
  • 1kg (2.2lb) - Lean Beef Mince (10% Fat)
  • 3 Tbsp (60g) - Tomato Paste
  • 2 Tbsp (40ml) - Worcestershire Sauce
  • 3 ¾ Cups (900ml) - Beef Stock
  • 1 Tbsp (20ml) - Balsamic Vinegar
  • 8 - Thyme Sprigs
  • 3 - Rosemary Sprigs
  • 3 - Bay Leaves
  • 1 ½ Cups (200g) - Frozen Peas
  • Seasoning To Taste

Mashed Potato

  • 1kg (2.2lb) - All Rounder Potatoes, Peeled & Chopped
  • 3 Tbsp (42g) - Unsalted Butter
  • ½ Cup (125ml) - Whole Milk
  • 1 - Egg Yolk
  • Seasoning To Taste

Instructions

Make the Mash

  • Place potatoes in a pot, cover with cold water, and season with salt. Boil 15–18 minutes until fork-tender. Drain well. Mash or rice until smooth. Stir in the butter, warm milk, and egg yolk; season with salt and pepper. Set aside.

Cook the Beef Filling

  • Heat olive oil in a large sauté pan over medium heat. Add onion, carrot, and celery. Cook 8–10 minutes until softened and lightly golden. Add garlic and cook 1 minute. Increase to medium-high, add beef mince, break apart, and brown (7–8 minutes). Season lightly.
  • Stir in the tomato paste and cook for 2 minutes to caramelise. Add Worcestershire, balsamic, beef stock, thyme, rosemary and bay leaf. Scrape the pan well. Simmer gently 25–30 minutes until rich and slightly thickened. Remove herbs/bay leaf. Stir in peas. Season to taste.

Assemble & Bake

  • Divide the beef filling evenly into 5 × 750 ml oven-safe containers. Spoon the mash on top and spread it evenly to the edges. Rough up the surface with a fork. Place the containers on a tray and bake at 200 °C (390 °F) for 20–25 minutes, or until golden.

Recipe Notes

Storage Instructions

Fridge

Once baked and cooled, seal the containers with their lids and store in the fridge for up to 4 days. Always allow the cottage pies to cool before refrigerating — sealing them while hot will create excess condensation, which can make the topping soggy.

 

Freezer

For longer storage, cool completely, then cover tightly with lids or freezer-safe wraps and freeze for up to 4 months. To avoid freezer burn, press cling film directly over the surface of the mash before sealing, then remove before reheating.

 

Reheating Instructions

Oven (best option)

Preheat to 180°C (350°F). Place the container (lid removed) on a tray and bake for 20–25 minutes if from the fridge, or 30–35 minutes if reheating from frozen. The oven keeps the mashed potatoes golden and crisp while evenly heating the filling. For extra colour, finish under the grill for 2–3 minutes.

Microwave (quick option)

Remove the lid, cover loosely with a microwave-safe cover, and heat on high for 4–5 minutes, checking halfway and stirring the filling gently if needed. This is the fastest option, but the topping will soften.
