Thick slices of portobello mushroom baked under a garlic cream sauce and a proper cheesy, herby topping. It’s basically all the good bits of a creamy bake without any of the actual cooking skill required.

Covering it with foil for the first 25 minutes lets the mushrooms cook through properly and soften, then taking the foil off for the last 5 minutes under the grill is what gets the cheese golden and bubbling on top.

Works well as a side for a bigger dinner, or bulk it out with some crusty bread and call it a meal on its own.

There's no sautéing or standing over a pan here. Just two quick mixes, a layer of mushrooms, and the oven does the rest of the work for you.

Portobello mushrooms hold their shape and soak up the garlic cream sauce really well, so you get that rich flavour all the way through rather than just on the surface.

It's a solid side dish for a roast or a barbecue, but it's hearty enough that it also works as a light meal on its own with some bread.

Ingredients

  • 8 Portobello Mushrooms Sliced
  • 120 g Mozzarella Cheese Grated
  • 60 g Parmigiano Reggiano Grated
  • 5 g Flat Leaf Parsley Chopped
  • 4 g Onion Powder
  • 0.5 g Dried Oregano
  • 0.5 g Dried Thyme
  • 0.5 g Dried Basil
  • 2 g Sweet Paprika
  • 180 ml Thickened Cream
  • 4 Garlic Cloves Minced
  • Salt & Pepper To Taste

Method

  • Preheat oven to 200°C (390°F).
  • In a mixing bowl, combine the mozzarella cheese, Parmigiano Reggiano, flat-leaf parsley, onion powder, dried oregano, dried thyme, dried basil and sweet paprika. Mix together and set aside.
  • In another bowl, combine the thickened cream and garlic. Whisk together and set aside.
  • Remove the stems from the portobello mushrooms so they can sit flat. Slice the mushrooms and stems into 1cm strips. Lay the mushrooms and stems neatly in a baking dish. It's okay to stack them on top of one another.
  • Pour over the cream and garlic mix, and sprinkle over the cheese and herb mix. Spread it out evenly, ensuring everything is covered.
  • Cover the baking dish with aluminium foil and bake for 25 minutes. After 25 minutes, remove the foil, return the mushrooms to the oven, and grill/broil for 5 minutes or until the cheese is golden brown. Dig in.
Chef's Tips
Slice the mushrooms and stems to a similar thickness — this keeps the bake time even, so nothing's left undercooked while other pieces turn soft and watery.
Spread the cheese and herb topping right to the edges of the dish — any bare patches of cream will bubble up without browning, leaving an uneven finish.
Keep an eye on it during the final grill — cheese can go from golden to burnt quickly under a broiler, so it's worth watching rather than walking away.
Storage & Reheating
Will keep in the fridge for up to 3 days in an airtight container. Not recommended for freezing — the cream sauce will split and turn watery once thawed. Reheat in the oven at 180°C (350°F), covered, until warmed through, or in the microwave for a quicker option.

Common Questions
Can I use a different mushroom variety?
Portobello works best since it's large enough to hold its shape and soak up the sauce, but big field mushrooms are a good substitute if that's what you can find.
Can I use fresh herbs instead of dried?
Yes, just use roughly three times the amount since fresh herbs are milder than dried, and add them along with the cheese mix as directed.
Do I need to grill it at the end?
It's worth it for the golden, bubbling cheese on top, but if your oven doesn't have a grill setting you can just bake it uncovered for the last 5-10 minutes at a slightly higher temperature instead.
Can I freeze this?
It's not recommended. The cream sauce will split and turn watery once thawed, so this one's best kept fresh in the fridge and eaten within a few days.
