In this granola recipe, I’ll run you through the quick & easy steps it takes to make this fantastic breakfast or snack. This can also be served any time of the day & it does give a great kick of energy, ensuring you can power on with your day & get things done.

Ingredients
 

  • 4 Cups (375g) - Rolled Oats
  • 1 Cup (135g) - Whole Almonds, Roughly Chopped
  • ½ Cup (65g) - Pepitas
  • 1 ½ tsp (3g) - Ground Cinnamon
  • 1 tsp (5g) - Sea Salt Flakes
  • ½ Cup (115g) - Coconut Oil, Melted
  • ⅓ Cup (80ml) - Maple Syrup
  • 1 ½ tsp (7g) - Pure Vanilla Extract
  • ½ Cup (45g) - Shredded Coconut
  • ½ Cup (70g) - Dried Cranberries

Instructions

  • Preheat oven to 180°c - 350°f.
    Preheat Oven
  • Place the rolled oats, chopped almonds, pepitas, ground cinnamon & sea salt flakes into a mixing bowl & combine.
    Granola Mix Step 1
  • Add in the melted coconut oil, maple syrup & vanilla extract. Stir to combine & coat well.
    Add Wet Ingredients
  • Pour the mixture onto a baking tray lined with parchment paper, spread out evenly & bake for 10 minutes. Remove & mix well. Place back into the oven for another 10 minutes & remove.
    Mix Bake
  • Add the shredded coconut, mix to combine & bake for a further 7 minutes to toast the coconut. Remove & let cool for 30 minutes.

  • Place the toasted granola into a clean bowl, add the dried cranberries & mix to combine transferring it to a glass jar with a tight lid. Store in cool dry space for up to 2 weeks. Dig in.

Granola Storage Instructions

To store, place the granola into a glass jar or any airtight container and place it in a cool dark space for up to 1 month.

Granola Serving Instructions

This granola is perfect served with cow, goat, plant or nut-based milk. It’s also a great addition to use as a topping for ice cream or any cream-based dessert and can be eaten on its own.

    I was looking for a less sweet granola, and tried yours for the first time today. I appreciated the well written directions, and the very accurate timing you provide for the baking stages. I also like the ‘loose’ finished texture, with separated distinct oat flakes. My old recipes created clumps, which I found to be too sweet. Thank you for this recipe, our mornings will start well with this in the pantry. I am looking forward to trying more of your recipes.
