Chipotle Beef & Potato Bowls – Easy Meal Prep for the Week

Ingredients

Chipotle Beef

  • Avocado Spray Oil
  • 1 kg Beef Mince 5% Fat
  • 8 g Onion Powder
  • 8 g Garlic Powder
  • 8 g Smoked Paprika
  • 4 g Dried Oregano
  • 4 g Ground Cumin
  • 100 g Chipotle in Adobo
  • Salt & Pepper

Crispy Potatoes

  • Avocado Spray Oil
  • 900 g All Rounder Potatoes Diced
  • 6 g Onion Powder
  • 6 g Garlic Powder
  • 6 g Smoked Paprika
  • 3 g Dried Oregano
  • 6 g Ground Cumin
  • Salt & Pepper

Salsa Pico De Gallo

  • 3 Tomatoes Diced
  • 1 Red or White Onion Diced
  • 1 Jalapeño or Serrano Pepper Diced
  • 10 g Coriander (Cilantro) Chopped
  • 1 Lime Juiced
  • Salt & Pepper

Garnish

  • Sriracha Mayo or Sauce of Choice
  • Spring Onions

Method

  • Chop all of the salsa ingredients and place them in a bowl. Season to taste and transfer to a separate meal prep container to keep fresh until serving.
  • Place the potatoes into a bowl, add all the seasonings, and toss to coat. Spread evenly with space between pieces on a lined baking tray or in an air fryer basket — avoid overcrowding, as this stops them from crisping. Spray with avocado oil and cook for 22 minutes at 190°C (375°F). If using an oven, increase the time to 30 minutes or until cooked through.
  • Add avocado spray oil to a large, high-rimmed pan over high heat and add the beef. Season with salt and pepper and cook for 8 minutes, or until browned and any liquid has evaporated. Add the seasonings and chipotle in adobo and cook, mixing well, for 2 minutes. Remove from the heat.
  • Serve the chipotle beef and potatoes in 5 x 750ml meal prep containers. Garnish with spring onion and drizzle over the sriracha sauce or sauce of choice. When reheating, top with fresh salsa just before serving.
Chef's Tips
Cook the beef until it's fully browned, and the liquid has evaporated, as written, before adding the seasonings and chipotle — stirring spices into a wet pan stops them from toasting and blooming properly.
Spread the potatoes out with space between them in the air fryer or on the tray — crowding traps steam and stops them from crisping.
Keep the salsa in its own container and add it fresh when reheating, as the method already says — this raw, dressed mix will turn watery and lose its texture if combined with the hot beef and potatoes ahead of time.
Storage & Reheating
Refrigerate the beef and potatoes for up to 4 days, or freeze for up to 3 months, in an airtight container. Keep the salsa and sriracha mayo separate — the salsa is best fresh, and mayo-based sauces split if frozen.
To reheat, microwave for 2–3 minutes until hot through, or warm in a pan. Top with fresh salsa, spring onion and sriracha mayo just before eating. Thaw frozen portions in the fridge overnight before reheating.

Storage Instructions

Fridge

Store in airtight containers for up to 3-4 days. Let the food cool slightly before sealing to prevent excess moisture.

Freezer

You can freeze the beef and potatoes separately for up to 2 months. For best texture, freeze without the salsa. 

Reheating Instructions

Microwave on high for 2–3 minutes, stirring halfway through. Add a splash of water or stock if it looks dry. For oven: reheat at 180°C/350°F for 10–15 minutes, covered.
