Add the mushrooms to a large mixing bowl. Add in all remaining ingredients & mix well.
Place the marinated mushrooms into a large baking dish, spread them out evenly & bake in the preheated oven for 15 minutes.
After 15 minutes, give the mushrooms a mix to ensure they're cooked through & continue baking them for 5 minutes or until golden & soft. Remove from the oven.
Place mushrooms into a serving bowl, squeeze over a quarter of a fresh lemon, & garnish with fresh thyme. Dig in.
