Add the mushrooms to a large mixing bowl. Add all remaining ingredients (except the lemon juice and extra thyme) and mix well.
Place the marinated mushrooms into a large baking dish, spread them out evenly, and bake in the preheated oven for 15 minutes.
After 15 minutes, give the mushrooms a mix to ensure they're cooking through, and continue baking for 5 minutes or until golden and soft. Remove from the oven.
Place the mushrooms into a serving bowl, squeeze over the lemon juice, and garnish with the extra fresh thyme. Dig in.

Spread the mushrooms out in a single layer rather than piling them up — overcrowding the dish will steam them instead of letting them roast and turn golden.Give them a proper mix halfway through baking — this helps them cook and colour evenly on all sides.Add the lemon juice right at the end, off the heat — squeezing it in earlier and baking it will mute its brightness compared to a fresh finish.
Storage & Reheating
Will keep in the fridge for up to 3 days in an airtight container. Reheat in a hot pan on the stovetop or in the oven at 180°C (350°F) until warmed through — the microwave works but the mushrooms will lose some of their texture.
