3 - Cos or Romaine Lettuces, Shredded (Chiffonade) & Washed
3 - Chicken Breasts, Butterflied & Filleted
6 - Rashers Bacon, Sliced
5 - Sliced Bread of Choice, Torn
1 ½ Tbsp (30ml) - Olive Oil for Chicken
2 tsp (10ml) - Olive Oil for Bread
Seasoning To Taste
Caesar Dressing
1 - Whole Egg
1 ½ tsp (15ml) - Lemon Juice
1 tsp (10g) - Dijon Mustard
⅔ Cup (150ml) - Neutral Flavoured Oil (I use mellow olive oil)
1 - Garlic Clove, Minced
20g (0.7oz) - Parmesan Cheese, Freshly Grated
6 - Anchovy Fillets In Oil

Instructions
Caesar Dressing
Place the egg, lemon juice, dijon mustard, and oil into a tall jar or container. Blend and emulsify with an immersion blender. Add in the remaining ingredients and blend again. Portion into containers and store in the fridge.
Caesar Salad
Preheat oven to 180°c - 350°f. Line 2 baking trays with parchment paper.
Evenly lay the bacon on one baking tray and the torn bread on the other. Drizzle the bread with olive oil and seasoning to taste. Place both trays into the preheated oven and bake for 12-13 minutes or until the bacon is done to your liking and the torn bread is golden and crispy. Remove and set aside.
Place a pan over medium-high heat, once hot add in the olive oil and sear the chicken for 3 minutes on each side. Remove and rest for 5 minutes. Slice or dice the chicken and bacon.
In a large bowl, add the shredded cos lettuce, chicken, bacon, grated parmesan, and seasoning to taste. Mix to combine and portion into meal prep containers.
Serve with the caesar dressing and croutons. Dig in.
