Ingredients
 

Roasted Potatoes

  • 1kg (2.2lb) - All Rounder Potatoes, Washed & Chopped
  • 1 Tbsp (20ml) - Olive Oil
  • 1 tsp (4g) - Onion Powder
  • 1 tsp (4g) - Garlic Powder
  • 1 tsp (2.5g) - Ground Cumin
  • 1 tsp (4g) - Sweet Paprika
  • 1 tsp (2g) - Dried Oregano
  • ½ tsp (0.5g) - Red Chilli Powder (Optional)
  • Seasoning To Taste

Bolognese Chilli Con Carne Hybrid

  • 1 Tbsp (20ml) - Olive Oil
  • 500g (1.1lbs) - Beef Mince (Ground Beef)
  • 4 - Garlic Cloves, Minced
  • 3 - Spring Onions (Scallions), Thinly Sliced & Separated
  • 1 ½ tsp (3.5g) - Ground Cumin
  • 2 tsp (2g) - Dried Italian Herbs
  • 2 Cans (800g - 1.76lbs) - Diced or Crushed Tomatoes
  • 120g (4.2oz) - Tomato Passata (Tomato Sauce)
  • 120g (4.23oz) - Mozzarella Cheese, Freshly Grated
  • Seasoning To Taste

Garnish

  • Sour Cream
  • Spring Onion (Scallion), Stems
  • Sriracha Mayonnaise

Instructions

  • Preheat oven or air fryer to 190℃-375℉. If using an oven, line a baking tray with parchment paper.
  • Place the potatoes in a mixing bowl. Add the olive oil and all the seasonings, mixing to combine.
  • Place the seasoned potatoes on the lined baking tray and bake for 25 to 30 minutes, mixing halfway through, until soft and golden. Remove and let cool. If using an air fryer, cook for 18-25 minutes.
  • Place a large rimmed pan over high heat, and add olive oil and the beef mince. Sear for 6-7 minutes. Add the garlic, spring onions (scallion), ground cumin, Italian herbs, and seasoning to taste. Mix to combine and cook for 1 to 1 ½ minutes.
  • Add crushed or diced tomatoes and tomato passata, mix well, reduce heat to low, and simmer for 15-20 minutes, stirring occasionally. Remove from the stovetop.
  • Evenly divide the potatoes into 5x 750ml meal prep containers. Add mozzarella cheese and beef mince over the top. Garnish with sour cream, spring onion (scallion), and Sriracha mayonnaise. Dig in.
