Ingredients
 

Chicken & Seasoning -

  • 1 Tbsp (20ml) - Olive Oil
  • 2 - Chicken Breast, Butterflied & Halved
  • 1 Tbsp (12g) - Brown Sugar
  • 2 tsp (8g) - Smoked Paprika
  • 2 tsp (8g) - Onion Powder
  • 2 tsp (8g) - Garlic Powder
  • 1 tsp (2g) - Dried Oregano
  • Salt & Pepper

Herby Mayonnaise -

  • 150g (5.2oz) - Mayonnaise
  • 10g (0.3oz) - Fresh Dill, Chopped
  • 10g (0.3oz) - Flat Leaf or Curly Parsley, Chopped
  • Salt & Pepper

Bread and Fillings -

  • 2-4 - Bread Rolls or Sandwich Slices
  • 1-2 - Tomatoes, Thinly Sliced
  • 1 - Baby Cos, Romaine, Leaves Separated & Washed
  • ½ - Red Onion, Sliced into Rings
  • Sauce or Relish of Choice

Instructions

  • Preheat your charcoal or gas BBQ to direct heat at 240 °C (470 °F). Alternatively, you can do this in a pan, oven, or air fryer.
  • In a bowl, add the chicken and seasoning and mix to combine.
  • Add all of the herby mayonnaise ingredients to a bowl and mix to combine. Check and adjust the seasoning. Place in an airtight container or jar and store in the fridge until ready to serve.
  • Sear the chicken for 3-4 minutes on each side or until golden, with an internal temperature of 74°C (165°F). If you’d like to add cheese, do so at this point. Remove and rest for 5 minutes.
  • Toast the buns or sandwich bread on the BBQ until lightly toasted. Spread one side with the herby mayonnaise and the other with another sauce of your choice. I went with a nice tomato relish: place lettuce, tomato, grilled chicken, and red onion. Close the sandwich and serve. Dig in.
