Ingredients
 

  • 500g (1.1lbs) - Penne Pasta or Pasta of Choice
  • 1 1/2 Tbsp (30ml) - Olive Oil
  • 1/2 - Brown (Yellow) Onion, Diced
  • 4 - Garlic Cloves, Thinly Sliced
  • 2 Tbsp (40ml) - White Wine or Vegetable Stock
  • 1 1/2 Cans (600g-1.3lbs) - Diced Tomatoes
  • 3 - Basil Stalks (Optional)
  • 1 1/2 tsp (7g) - Granulated Sugar (Optional)
  • 180ml (3/4 Cups) - Thickened Cream
  • 10g (0.3oz) - Basil Leaves, Roughly Chopped
  • Seasoning To Taste
  • Parmigiano Reggiano Cheese, Freshly Grated To Serve
  • Cracked Black Pepper To Serve
  • Basil, Thinly Sliced To Serve
  • Extra Virgin Olive Oil To Serve

Instructions

  • Bring a saucepan of salted water to a boil. Cook the pasta 1 minute less than the packet instructions.

  • Place a large high rimmed pan over medium-high heat. Add in the olive oil & onion, saute for 3 minutes. Add in the garlic & saute for 45 seconds.

  • Add in the tomatoes, sugar, basil stems & season to taste. Mix to combine & bring to a boil. Add in the thickened cream, bring back to a simmer, reduce the heat to medium-low & simmer for 6 minutes.

  • Add in the sliced basil & check seasoning levels. Add the pasta into the sauce, straight from the saucepan, bringing along some of the pasta water. Mix to combine, adding in more pasta water if needed (pasta water helps the sauce stick)
    Mix Pasta
  • Serve in bowls, grate over some parmesan cheese, garnish with basil, cracked black pepper & extra virgin olive oil. Dig in.
